Easy, Healthy, Kid Friendly Soup Recipe

If you are like me, a tried and true healthy recipe for dinner is always welcomed. If anyone is interested, this is a really easy and tasty recipe for vegetable beef soup. It makes A LOT...so there are plenty of leftovers! And...the kids will eat it (I add some shredded cheddar and crushed up saltines to theirs and they love it!)
1 lb. browned lean ground beef
1 bottle (quart size) of regular V8 juice
1 can chicken broth
1 large can of stewed tomatoes crushed up
2 bags of frozen veggies for soup w/tomatoes (Publix has their own brand, also PicSweet makes a variety)
1 can creamed corn
1 can blackeyed peas (no drain)

Throw everything in a big pot (even frozen stuff) and boil for 30 minutes and simmer for an hour.
OR
you can throw everything in a big crock pot (even raw ground beef) and place on low in the morning and it will be done in 4-6 hours.

This sounds really good, and easy to make. Parents could put this in a Crock Pot in the morning, and the family could come home to a healthy meal in the evening!
